Italian Salad

Italian freshness – continue the summer with this salad.
This is a perfect lunch.

4 servings


1 bag (70g) mixed salad (ruccola, baby leaf spinach, mâché, bulls blood etc)
1 cantaloupe melon
1/4 small watermelon
2 avocado
2 red onion
1 handful fresh mint leaves
150g/0.4 lb mixed Italian meats (your favorite like Parma ham, salami, bresaola)

1 dl (0.5 cup) extra virgin olive oil
1 lemon, juice and zest
2 teaspoon honey

Mix all ingredients.

Put the salad on a plate. Peel and cut the melon and the avocado in chunks. Slice the onion and chop the mint leaves. Put the melon, avocado and onion on top of the salad. Then sprinkle the mint on the vegetables. Season with salt and ground pepper. Lastly put the charcuteries and the dressing on the salad.
