This is heaven.
1 cup chanterelles
4 green onion or 2 small shallots (chopped)
1/2 cup cream
Lettuce Salad with zucchini
1/2 lemon squeezed
2 pinch dried mint
Clean the chanterelles.
Fry the chanterelles with some butter together with the onion. Pour in the cream and season with salt and pepper. When finished put a side.
Beat the eggs with salt and pepper. Fry the omelette in some butter on medium temperature (like a pancake). I like the omelette fried on both sides.
Pour in the chanterelle stew on top of one side of the omelette. Grate some cheese on the omelette and fold it.
Chop the lettuce and the zucchini and put it in a bowl. Add some olive oil, salt mint and the lemon. Mix all ingredients wit your hands.
