Tabouli – Tabbouleh Lebanese Parsley Salad

4 servings


4 cups chopped fresh flat-leaf parsley leaves
2 large tomatoes, finely chopped in cubes
1 yellow onion
2 green onions, thinly sliced (optional)
1/2 cup chopped fresh mint
1/4 cup or more extra virgin olive oil
1/4 cup lemon juice
1 tablespoon dry mint


Mix all ingredient in a bowl and serve lettuce.
I sometimes finally chop lemon peel and add it to the mixture.
