Chicken Legs Thai Barbecued

Thai marinated chicken legs with garlic and coriander.

Serves 4

Ingredients:

4 large chicken legs
1 bunch fresh coriander
2 sticks lemon grass
2 limes, zest and juice
1 green chilli
2 tablespoons rapeseed oil
1 thumb-sized piece ginger, grated
3 cloves garlic, peeled
2 tablespoon fish sauce

After grill

1 bunch fresh coriander, chopped
1 clove garlic, chopped
1 limes, juice

Directions:

Slash the chicken legs all over with a knife. Chop the coriander, lemon grass, ginger, garlic nicely. mix the chopped ingredients with lime juice, zest, rapeseed oil and the fish sauce. If you like you can use a mixer or food processor. Rub the chicken legs with the paste.

Grill the legs, using a barbecue, on indirect heat

When the legs are about half cooked, put them directly on the fire. Grill, turning now and then, until cooked through and crispy brown on the outside. Sprinkle the chopped coriander leaves, garlicc and lime juice over to serve.
