1 bunch green asparagus
1 sliced zucchini
1 clove garlic
A pinch of chili flakes (optional)
Red onion vinaigrette
½ finely chopped red onion
3 tablespoons red wine vinegar
1 teaspoon of liquid honey
3 tablespoons olive oil
1 tablespoon finely chopped flat-leaf parsley
freshly ground black pepper
Start with the vinaigrette.
Mix the onion in vinegar, honey and oil and let soak for 5 minutes. Whisk the mixture with the parsley and season with salt and pepper.
Break off and discard the lower portion of asparagus.
Shuffle 2 tablespoons olive oil with the asparagus and zucchini. Crush the onion and add it to the vegetables with the chili flakes. Salt and pepper and grill for about 5 minutes.
Top with Parmesan cheese and drizzle with Red onion vinaigrette.
